Cheesy Baked Cauliflower 🧀

Ingredients
▫️ 5 cups raw cauliflower florets
▫️ 100 grams Boursin cheese, 3/4 of a block
▫️ ¼ teaspoon salt
▫️ 2 teaspoons olive oil
▫️ ½ cup broth , or water
▫️ 1 tablespoon Parmigiano Cheese , optional

Instructions
▫️ Preheat the oven to 400°F (200C). Add the cauliflower to the baking dish, sprinkle of salt and a drizzle of olive oil on top. Nestle in the Boursin cheese in the middle and pour in the broth (or water).  ▫️ Note: You can add the whole block of Boursin or as much as you like (I added ¾ of it). Feel free to use any broth of choice.  ▫️ Bake uncovered for 35 to 40 minutes, take it out of the oven, mix it all together and enjoy. ▫️ Store any leftovers in the fridge.

Air Fryer Hard Boiled Eggs 🥚

Ingredients
▫️ 4 eggs

Instructions
▫️ Gently add the eggs to the air fryer basket and air fry them at 275F (135C) anywhere from 11-13 minutes for jammy eggs.
▫️ Note: If the air fryer doesn't have a setting as low as 275F, you can also cook them at 300F (150C) for 10-12 minutes or until desired doneness.
▫️ While the eggs are cooking, fill a bowl with ice water. As soon as the timer goes off, transfer the eggs to the bowl of ice water. This prevents the eggs from overcooking and makes it easier to remove the peels.
▫️ Peel and enjoy!

Big Mac Salad 🍔🥗

Ingredients

The Dressing
▫️ ¼ cup mayo, I love Vegenaise or Primal Kitchen
▫️ ¼ cup sour cream
▫️ ¼ cup plain yogurt, or leave it out
▫️ 1 tablespoon tomato paste
▫️ 2 teaspoons sriracha, optional
▫️ 2 tablespoons honey Dijon mustard
▫️ 2 pickles, finely diced
▫️ 2 tablespoons pickle juice

The Salad
▫️ 1 iceberg lettuce, chopped
▫️ 400 grams lean ground beef, any meat works or plant-based meat
▫️ 2 teaspoons avocado oil, any oil
▫️ ½ onion, finely diced
▫️ 2 garlic cloves, finely diced
▫️ salt + pepper, to taste
▫️ ½ cup cheese, grated cheddar

Instructions
▫️ Note: This recipe makes 3 portions so please divide everything equally into 3 bowls OR add as much as you like according to your lifestyle.

The Dressing
▫️ Finely chop the pickles or use relish. Combine with remaining ingredients for the dressing. Mix well and set aside.
▫️ Now, slice and dice the iceberg lettuce. Divide it equally into 3 bowls and set aside.
The Salad
▫️ In a pan on medium high heat, add the oil and let it heat up.
▫️ Add ground beef (or meat of choice) to the pan and fry until browned, making sure to evaporate all the liquid.
▫️ Once browned, season with salt and pepper, add the onions, garlic and sauté for 2-3 minutes.
▫️ Add the cheese on top, and turn off the heat.
▫️ Once the cheese melts, you can put the cheesy meat topping on top of the lettuce, add as much Big Mac sauce as you'd like and enjoy!

Breaded Tomato Sandwich 🍅

Ingredients
▫️ ¼ cup all-purpose flour, seasoned with salt and pepper
▫️ 2 small eggs, beaten and seasoned with salt and pepper
▫️ 1 cup Italian breadcrumbs, seasoned with salt and pepper
▫️ 6 slices tomato (1/2-inch thick), make sure the tomato is firm and not too ripe
▫️ ⅓ cup avocado oil

Additional Toppings
▫️ mayo , or spicy mayo
▫️ lettuce
▫️ sliced turkey breast , or black forest ham

Instructions
▫️ Make the dredging station by adding flour to one bowl, the beaten eggs into a second, and the breadcrumbs to a third.
▫️ Dip each tomato slice in the flour, then egg mixture, then breadcrumbs, making sure to coat each slice all over. Repeat this step with the remaining slices.
▫️ Note: If you don't want to get your hands too dirty use the right hand, left hand, right hand method. Dip the tomato in the flour with the left hand, then dip it in the egg mixture switching to your right hand, and lastly coat it in the breadcrumbs by switching to the left hand again. In doing so, you will avoid buildup on your fingers.
▫️ Once the tomato slices have been breaded, set them aside. Coat the bottom of a pan with a thin layer of oil and heat the oil over medium-high heat, until it shimmers. (The tomato slices should sizzle when placing them in the oil.)
▫️ Fry the tomatoes for 2 to 3 minutes on each side, or until golden. Transfer the cooked tomatoes to a paper towel-lined plate to remove any excess oil.
▫️ Assemble the fried tomato "sandwiches" with any toppings you like. I added a teaspoon mayo to my tomato, then lettuce, then a slice of black forest ham followed by another slice of breaded tomato on top. Enjoy!
▫️These are best served right away.

Healthy Coleslaw Recipe 💥

Ingredients  ▫️ ¼ head of green cabbage
▫️ 2 carrots
▫️ salt, to taste
▫️ handful of fresh parsley , finely chopped
▫️ 2 tablespoons olive oil
▫️ 3 tablespoons white balsamic vinegar

Instructions
▫️ Note: Everything in this recipe is to taste. You can always add a little at a time, taste, and adjust accordingly. You can make a much bigger salad as it will keep in the fridge for a few days, so feel free to double the recipe if needed.  ▫️ Place the quartered cabbage wedge on one of its sides and slice it thinly with a sharp knife. If you want to skip this step and make life easy, you can also put the cabbage wedge through a food processor with the slicer attachment or use a mandolin to slice it. Please be careful when using a knife or mandolin.  ▫️ Use a julienne peeler or a standard vegetable peeler to julienne or peel the carrots. (A julienne peeler will slice veggies into thin strips.) You can also grate the carrots in the large holes of a cheese grater or in the food processor, using the same attachment as with the cabbage. ▫️ Transfer the cabbage and carrots to a bowl. Add a pinch of salt and gently massage the slaw mixture with your hands. The salt will pull out the moisture from the cabbage and make it easier to eat.  ▫️ Add the finely chopped parsley, olive oil, and white balsamic vinegar. Give it a toss and enjoy!

EASY Greek Bowl 🌿

Ingredients  ▫️ 8 oz chicken breast , mine was 8oz raw and cubed
▫️ 1 tablespoon olive oil, divided in half
▫️ salt, to taste
▫️ pepper, to taste
▫️ paprika, to taste
▫️ garlic powder, to taste
▫️ ½ cup jasmine rice, cooked
▫️ 1 handful baby arugula , optional or sub for lettuce
▫️ ¼ cup tomato, finely diced
▫️ ¼ cup cucumber, finely diced
▫️ kalamata olives , measure with your heart
▫️ ¼ cup feta , any you like, I crumbled mine
▫️ 1 tablespoon red onion, finely diced
▫️ 2 tablespoons tzatziki , store bought or homemade
▫️ fresh parsley , for garnish (finely chopped)

Instructions
▫️ Cook 1/2 cup dry jasmine rice as per the package instructions. I like to add a big pinch of salt to the water as well. Once cooked, set it aside. You can make rice the night before as well or use cauliflower rice instead.  ▫️ Cube the chicken breast into equal sized pieces so that it cooks evenly and in the same amount of time. Add 1/2 tablespoon of oil and the seasoning, all to taste. ▫️ In a pan on medium-high heat, add the other 1/2 tablespoon of oil and make sure it heats up. When the chicken is placed, it should sizzle. I like to place the chicken cubes in the pan spaced apart so that the meat doesn’t steam. ▫️ Cook chicken cubes on medium-high heat for 2-3 minutes on each side or until browned. Take it off the heat, cover loosely with foil and let it rest while you assemble the bowl. ▫️ To a bowl, add the cooked rice, handful of baby arugula, the cooked chicken, and the toppings of choice. You can add as much or as little of everything as this recipe is super versatile. ▫️ You can dollop on homemade or store-bought tzatziki and enjoy! Finely chopped fresh parsley on top is optional.

COMFORTING Sweet Bread + Milk! 🍞🥛

Ingredients
▫️ 2 cups cubed sweet bread , corn bread or regular bread works as well
▫️ 1 tablespoon butter
▫️ sugar, to taste
▫️ 3 cups hot milk, enough to cover the bread

Instructions
▫️ Cube up some sweet bread or any bread you like and add to a bowl. ▫️ Add a few thin slices of butter on top, a sprinkle of sugar to taste and pour on the hot milk. ▫️ Enjoy right away.

FLUFFY Easter Bunny Bread 🐰

Ingredients
▫️ 1 teaspoon canola oil, (or any neutral oil)
▫️ 200 grams havarti cheese , (I used Castello’s Creamy Havarti Cheese)
▫️ 2 packages Pillsbury Crescent Rolls , (8 ounces or 225 grams each)
▫️ sesame seeds , (optional)

Instructions
▫️ Preheat the oven to 375°F (190°C). Add a touch of oil to your clean countertop so that the dough doesn’t stick. ▫️ Unroll the dough from the Pillsbury packs and connect all the pieces together by gently pinching all the sides to form one large rectangle. ▫️ Cut five lines lengthwise and six lines horizontally. You should have 30 small squares of dough. Place a small piece of creamy Havarti cheese into each square. Take each square and pinch it together so that the cheese is sealed and roll the stuffed dough into a ball. ▫️ Line a baking sheet with parchment paper. Arrange the cheese-stuffed balls into the shape of a rabbit head. You will need 14 dough balls to make a circular face and 8 dough balls for each ear. Sprinkle some sesame seeds onto the ears for decoration, if desired.  ▫️ Bake for 15 to 20 minutes, or until golden. Let cool.  ▫️ If you'd like, using an Easter-themed cookie cutter, cut some hard cheese into shapes. Once the bread is cool, transfer it to a serving platter. Decorate the plate with the cut-out cheese. Enjoy!

SWEET Cottage Cheese Fruit Salad 🍑🍒

Ingredients  ▫️ 1 cup cottage cheese, or ricotta
▫️ 10 cherries, pitted
▫️ 5 yellow plums, pitted
▫️ 1 small peach, pitted
▫️ ½ lime, juiced
▫️ hot honey
▫️ fresh lemon thyme or mint, for garnish, optional
▫️ tortilla chips, for serving, optional

Instructions
▫️ Spread the cottage cheese onto a plate and set aside. ▫️ Pass the fruit through the veggie chopper or dice it finely. ▫️ Squeeze a little bit of lime juice on top of the fruit and add a drizzle of hot honey.
▫️ Serve on top of the cottage cheese and add an additional drizzle of hot honey on top. Garnish with lemon thyme or mint, if using. ▫️ Enjoy as is or serve with tortilla chips!

Ingredients:
1/2 cup cottage cheese
9 slices of turkey breast, cubed
6 slices of Swiss cheese, cubed
1 onion, finely chopped
9 whole eggs
1 teaspoon flour
1 teaspoon baking powder
1 pinch salt

Preheat the oven to 400F. Add all of the ingredients to a bowl and mix. Line a 9x13 inch dish with parchment paper and pour the mixture in. Bake for 25-30 minutes or until set. Enjoy!

Chipotle-Inspire Beef Burrito Bowl 🌯

Ingredients  ▫️ 1 cup jasmine rice
▫️ The Ground Meat
▫️ 1 pound lean ground beef
▫️ 2 teaspoons olive oil
▫️ ½ yellow onion
▫️ ½ teaspoon salt
▫️ ¼ teaspoon pepper
▫️ ¼ teaspoon chipotle chili powder

Chopped Veg
▫️ 1 tomato
▫️ ¼ cucumber
▫️ 1 slice onion
▫️ 1 jalapeño
▫️ 1 pinch salt

Extra Toppings
▫️ ½ Romaine lettuce
▫️ 100 grams grated cheddar cheese
▫️ guacamole
▫️ sour cream

Instructions
Ground Meat & Rice
▫️ Cook the rice as per the package instructions. I like to cook mine in a rice cooker making sure to salt the water. Don't forget to rinse your rice until the water runs clear prior to cooking it for best results.  ▫️ While the rice is cooking, warm the oil in a large pan over medium-high heat.  ▫️ Add the ground meat. Using a wooden spoon, break it into small chunks as it browns. Cook the meat for about 10 minutes, or until all the liquid has fully evaporated.  ▫️ Once the meat has browned, reduce the heat to medium-low and add in the onions, salt, pepper, and chipotle. Cook for a few more minutes or until the onions have softened. Set aside. 
Chopped Veg
▫️ Using a food chopper, pass each vegetable through, one at a time, until you have a fine dice. This includes the tomato, cucumber, onion, jalapeño. Add a pinch of salt to taste and stir.  ▫️ Note: make sure to cut the veggies into smaller pieces so they can easily pass through the food chopper. You can also take your time and cut everything into small cubes with a knife if you don't have a chopper at home 
Final Steps
▫️ This recipe makes 4 bowls so I like to divide everything equally into four portions as per my instructions below.  ▫️ In a bowl, add 1/2 cup of the cooked ground meat (75 grams after its cooked), 1/2 cup cooked jasmine rice, a handful of shredded lettuce, 1/8 cup grated cheddar cheese (35 grams) and the chopped veg.  ▫️ Feel free to add guac or sour cream to the bowl and enjoy!

Sweet Potatoes
▫️ 1 pound sweet potato
▫️ 2 tablespoons olive oil
▫️ salt
▫️ 1 pinch pepper
▫️ 1 pinch paprika
▫️ 1 pinch garlic powder
Ground Meat
▫️ 1 pound lean ground beef, or turkey
▫️ ½ yellow onion
▫️ 3 cloves garlic
▫️ salt
▫️ ¼ teaspoon pepper
▫️ ½ teaspoon chili powder, or paprika
Chopped Veg
▫️ 1 tomato
▫️ ¼ cucumber
▫️ 1 slice onion
▫️ 1 jalapeño
▫️ salt
Extra Toppings
▫️ ¼ cup cheddar cheese,
▫️ guacamole
▫️ sour cream or spicy mayo
▫️ Romaine lettuce

Instructions:

Sweet Potatoes
▫️ Preheat the oven to 425F (220C). Line a baking sheet with parchment paper. ▫️ Add the peeled, cubed sweet potato to a bowl and toss with the oil. Season to taste with salt, pepper, paprika, + garlic powder. Place the seasoned potato onto the baking sheet, spreading everything evenly so each piece has space. ▫️ Bake until fork-tender, 30 to 40 minutes, flipping the potatoes over halfway through cooking. ▫️ You can also air-fry them at 390F (200C) for 17 minutes making sure to toss them halfway through. 
Ground Meat
▫️ Add the ground meat. Using a wooden spoon, break it into small chunks as it browns. Cook the meat for about 10 minutes, or until all the liquid has fully evaporated. ▫️ Once the meat has browned, reduce the heat to medium-low and add in the onions, garlic, salt, pepper, and chili powder, if using. Cook for a few more minutes or until the onions have softened. Set aside. 
Chopped Veg
▫️ Using a food chopper, pass the tomato, cucumber, onion, and jalapeño through, one at a time,  
Assembly
▫️ Divide everything equally among four bowls: 1/4 of the sweet potatoes, 1/2 cup ground meat (75 grams after its cooked), 1/8 cup grated cheese (35 grams), and the chopped veg.  ▫️ Feel free to top with guacamole, sour cream, + lettuce. Enjoy!

Ingredients

▫️ 2 slices tomato
▫️ ¼ cucumber, cut in half
▫️ 1 slice onion, (one ring)
▫️ 1 jalapeño, seeded and halved
▫️ 8 kalamata olives , pitted
▫️ 2 teaspoons olive oil, extra virgin
▫️ ½ lemon, juiced
▫️ 1 pinch salt, to taste
▫️ 1 cup cottage cheese, 2%
▫️ fresh herbs such as basil, oregano, or parsley, optional

Instructions

▫️ Using a food chopper, pass each vegetable through, one at a time, until you have a fine dice. This includes the tomato, cucumber, onion, jalapeño, and olives.  ▫️ Note: make sure to cut the veggies into smaller pieces so they can easily pass through the food chopper. You can also take your time and cut everything into small cubes with a knife if you don't have a chopper at home.  ▫️ When everything is diced, open up the chopper and add olive oil, lemon juice, and salt and mix.  ▫️ Spread the cottage cheese onto the base of a serving plate.  ▫️ Add the chopped salad on top of the cottage cheese and top it off with fresh herbs (if using). Enjoy!

HEALTHY Red Cabbage Slaw 🥬

The Veggies
▫️ ½ red cabbage
▫️ 4 carrots
▫️ 1 handful fresh parsley
▫️ 1 pinch salt

The Dressing
▫️ 1 tablespoon olive oil
▫️ 1 ½ tablespoons white balsamic vinegar
▫️ 1 tablespoon honey dijon mustard

Instructions:

The Veggies
▫️ Working one cabbage wedge at a time, hold onto the top (the root) and start shredding it by using a serrated y-peeler. Additionally, you can thinly slice it with a knife or use a food processor with the shredder attachment for ease.  ▫️ Once shredded, add to a bowl. Peel the carrots and julienne each one with a julienne peeler. Alternatively, you can grate them on a cheese grater or try to julienne them with a knife.  ▫️ Add the julienned carrots to the bowl along with the finely chopped fresh parsley.  ▫️ I like to add a pinch of salt on top and massage with clean hands so that the cabbage softens a bit. 
The Dressing
▫️ In a measuring cup or mason jar, add the olive oil, white balsamic vinegar, and honey dijon mustard. Whisk well, pour it over the salad and enjoy with your favourite protein of choice.

EASY Homemade Flour Tortillas 🌮 🌯

Ingredients
▫️ 1 ¼ cups bread flour
▫️ ½ teaspoon salt
▫️ 1 teaspoon baking powder
▫️ ½ cup hot water
▫️ 2 ½ tablespoons melted butter

Instructions
▫️ Add the bread flour, salt, and baking powder to a bowl.
▫️ Next, carefully add the hot water to a large measuring cup and add the butter. Let the butter sit in the water as you stir a few times, until it melts. ▫️ Once the butter is melted and the water is warm to the touch, add it to the dry ingredients. ▫️ Mix the wet and dry ingredients with a fork until combined and then switch to your hands. Knead for a few minutes. The dough should be nice and soft. ▫️ Note: If the dough is too sticky after a few minutes of kneading, add a small dusting of flour until a smooth ball forms. ▫️ Cover the dough in plastic wrap and let rest for 15 minutes. ▫️ After the dough has rested, divide it into 8 equal portions (or more or less portions depending on how big or small you like your tortillas). Roll each portion into a ball. From here, I like to use a tortilla press for a smaller, thicker tortilla or roll it out with a rolling pin for a thinner, larger tortilla. ▫️ If using a tortilla press, place a dough ball in between two pieces of wax paper. Close the top and gently press down with the lever to form a perfect tortilla. ▫️ Once the tortillas have been rolled out, heat up a pan on the stove over medium heat and cook on each side for a few minutes, or until golden bubbles form.

Easy Shrimp Tacos 🌮🦐  
Ingredients: ▫️ 12 tiger shrimp, peeled and deveined ▫️ 2 teaspoons avocado oil, + 1 additional for the pan
▫️ 1 teaspoon Cajun seasoning, to taste ▫️ 1.5 avocados, ripe
▫️ 1 pinch salt, to taste
▫️ lime juice, to taste
▫️ 4 corn tortillas, or flour
▫️ shredded red cabbage, to taste ▫️ spicy mayo, to taste
▫️ cilantro for garnish, (or parsley)

Instructions:
▫️ Thaw the shrimp as per the package instructions. Pat it dry. I like to buy wild caught peeled and deveined shrimp but feel free to use any of choice.
▫️ Next, add the shrimp to a bowl with two teaspoons of avocado oil and the Cajun seasoning.
▫️ Heat up a pan on the stove, add another teaspoon of oil (if needed) and cook the shrimp for 1-2 minutes on each side making sure to space them apart.
▫️ Take the shrimp off the heat and in that same pan add the tortilla one at a time. Heat up the tortilla until it has some colour on each side.
▫️ Note: you can also place the tortillas directly over your burner if you have a gas stove to char them on each side.
▫️ Now, mash the ripe avocados to a bowl with a pinch of salt and a touch of lime juice. Set aside.
▫️ Once the tortillas are charred, begin to assemble. I like to add a teaspoon or two of the avocado cream, followed by some thinly shredded purple cabbage, a few shrimp on top and a drizzle of spicy mayo.
▫️ Garnish with cilantro and enjoy!

DELICIOUS Deviled Egg Chicks 🐥

Ingredients
▫️ 8 eggs
▫️ ⅓ cup mayonnaise ▫️ 1 tablespoon dijon mustard ▫️ 1 pinch of salt ▫️ 1 pinch black pepper
▫️ 1 pinch paprika
▫️ 1 teaspoon sriracha
▫️ ¼ carrot, sliced thinly into circles and quartered
▫️ 32 candy eyes, peppercorns or olives will work  ▫️ 1 cup arugula, for presentation

Instructions
▫️ Boil the eggs in a large pot of boiling water, about 10 minutes. While they cook, prepare a large bowl of ice water.  ▫️ Submerge the cooked eggs into the ice water. This will help the shells come off easily. Once cool, remove the shells.  ▫️ Cut each egg in half and gently scoop out the yolks. Add the yolks to a fine mesh strainer and press them through using a spoon. This is totally optional but it will create a smoother texture. Add the strained egg yolks to a bowl. Add the mustard, salt, pepper, paprika, and sriracha (if using). Stir well and add the egg yolk filling to a piping bag fitted with a 1m star tip or to a ziplock bag (see notes below).  ▫️ Pipe the egg yolk mixture into each egg half. Place a small piece of carrot in the center of each egg, to act as the chick "beak." ▫️ Now place two candy eyes onto each egg and arrange the deviled egg chicks nicely onto a plate. I added baby arugula to the bottom of my plate for presentation but feel free to use any greens. Enjoy!

▫️ In the bowl of a stand mixer add the active dry yeast, sugar, and warm milk. Using a whisk, give it a quick stir, and let it rest for 5 to 10 minutes or until it foams up. If it does not activate or foam up, do not proceed with the remaining recipe.
▫️ Once the yeast activates, add the oil, eggs, sugar, lemon zest, vanilla, warm milk, and melted butter. I melted the butter and milk together on the stove. The butter and milk should be warm, not hot. ▫️ Stir the ingredients until the egg yolks + whites are broken up. Add the dough hook attachment on the stand mixer and, with the mixer on medium-low speed, mix while gradually adding the flour, until all the flour is included, + the dough pulls away from the sides of the mixing bowl.  ▫️ Remove the dough from the stand mixer, shape it into ball, + lightly grease it with the melted butter or oil. Place the dough back in the bowl of the stand mixer and loosely cover with a lint-free kitchen towel or plastic wrap. ▫️ Leave the dough in a warm spot for 2 hours, or until the dough has tripled in size. ▫️ Once risen, punch the dough down + place it on a clean counter. Cut the dough in half + cut each half into 3 equal pieces. Form each dough piece into a ball and then roll each ball into a 14 to 15-inch-long rope. Line up 3 of the ropes in parallel lines + pinch the tops of the 3 pieces together to bind them. Then, braid the 3 ropes to form a loaf. Pinch the bottom of the 3 ropes together to seal the braided loaf. Transfer them onto the parchment paper-lined baking sheets, cover them with a lint-free kitchen towel or plastic wrap, + let them rise in a warm spot for 1 hour. After 45 mins, place a rack in the center of the oven, then preheat to 350F.

EASIEST Zucchini Bread 🤤

Ingredients:
▫️ 1.5 cups grated zucchini, about 1 pound, 1 large or 2 smaller zucchini (grated on the second largest side)
▫️ 1 egg, replace with 1/4 cup apple sauce if vegan
▫️ ½ cup maple syrup, 125 mL ▫️ 1 teaspoon pure vanilla extract
▫️ ⅓ cup avocado oil, 80 mL, any oil works
▫️ ¼ cup milk, 60 mL, any you like
▫️ 1.25 cups all-purpose flour
▫️ 1 teaspoon baking soda
▫️ pinch salt

Instructions:
▫️ Pre-heat the oven to 350F (180C). Leave the skin on your zucchini and grate it.
▫️ Take the grated zucchini in your hands and squeeze out as much water as you can or use a mesh bag. Add the squeezed out zucchini to a bowl with the rest of the wet ingredients and whisk.
▫️ In a seperate bowl mix the dry ingredients.
▫️ Add the dry ingredients to the wet and mix until fully combined. Line a loaf pan with parchment paper and pour in the batter.
▫️ Optionally for presentation I added two very thin strips of zucchini on top but you definitely don’t have to.
▫️ Bake until a knife or a toothpick comes out clean. Mine took exactly 50 minutes but please keep an eye on it as it will depend on the oven. Let it cool a bit and enjoy.

Meal Prep Chicken Bake 🍗

Ingredients:
▫️ 4 tablespoons jasmine rice, rinsed ▫️ 8 tablespoons unsalted broth (vegetable, chicken, beef, or whatever your preference)
▫️ 2 tablespoons plain yogurt
▫️ 1 teaspoon pesto
▫️ 1 teaspoon Italian seasoning, plus more for the chicken
▫️ salt, to taste
▫️ 2 tablespoons chopped frozen spinach
▫️ 5 ounces cubed boneless skinless chicken thighs (1/2 cup)
▫️ ½ tablesooon grated parmigiano cheese

Instructions:
▫️ NOTE: this recipe makes ONE portion but feel free to make as many as you like in individual OVEN-safe glass Tupperware. I like to make enough for two days. Calories and macros will depend on the brands you use, so for most accurate results use My Fitness Pal.  ▫️ Preheat the oven to 400F (200C).  ▫️ Add the rice to the bottom of your oven-safe dish. Add the broth, yogurt, pesto, seasoning to taste, and frozen spinach. Stir well.  ▫️ Season the chicken with salt and Italian seasoning.  ▫️ Add the chicken on top of the rice mixture and stir it all together. Add a sprinkle of parmesan on top and bake for 40 minutes or until the chicken is fully cooked (white meat and clear juices throughout; no pink).  ▫️ NOTE: the lids on Pyrex are NOT oven-safe so please bake uncovered.
▫️ Remove from the oven, fluff up the rice, and enjoy!

One Ingredient Chocolate Mousse 🍫

Ingredients:
▫️ ½ cup chocolate chips , I like dark
▫️ ⅔ cups water, cold

Instructions:
▫️ Add the chocolate chips and water to a blender. Blend for 2 minutes or until smooth but bubbly.  ▫️ Pour into ramekins and refrigerate overnight.  ▫️ Enjoy with chocolate shavings, as is, or with a scoop of vanilla ice- cream!

HEALTHY Breakfast Tacos 🌮

Ingredients:
▫️ 1 tablespoon olive oil
▫️ ½ yellow onion, slice
▫️ 1 bell pepper, thinly sliced (I used Sheppard, but you can use any you enjoy)
▫️ ⅛ teaspoon salt, to taste
▫️ 2 large eggs
▫️ 1 teaspoon olive oil, if needed for the eggs
▫️ 2 six-inch tortillas, I used almond flour by Siete, but you can use any
▫️ 1 tablespoon feta cheese, to taste

Instructions:
▫️ Slice the onion and pepper. Add a tablespoon of olive oil to a pan on medium heat. Sauté the onions and pepper for a few minutes. They should have some colour, but also still have a bit of a bite to them. Add a small pinch of salt and remove from the heat.
▫️ Place the sautéed veggies in a bowl/plate, set aside. In the same pan, add a teaspoon of olive oil if the pan is dry. Whisk two eggs and add them in.
▫️ Scramble the eggs, add a pinch of salt and remove onto a plate. In that same pan again, warm up the tortillas one at a time for 15 seconds on each side.
▫️ Remove from the heat and assemble. I like to add a small handful of feta to the bottom of one tortilla, then 1/2 of my scrambled egg, and some of the veggies on top. Repeat the assembly for the second tortilla, and enjoy.

Clementine Cake 🍊

Ingredients:
avocado oil spray
4 eggs, at room temperature
¾ cup avocado oil, 175 ml
1 cup granulated sugar, 200 grams
2 clementines (or tangerines), washed, quartered, + seeds removed
1 teaspoon orange extract, 5 grams
2 cups all-purpose flour, 250 grams
¾ tablespoons baking powder, 8 grams (make sure it’s not expired)
½ teaspoon salt, 3 grams
powdered sugar, for dusting (optional)

Instructions:
* Please check if the baking powder or flour is expired prior to starting.
* Preheat the oven to 350F (180C). Line a loaf pan with parchment paper and spray with baking spray. You can use a bigger size pan as well, but the cake will be larger and thinner, so you may need to adjust the baking time.
* Wash the clementines really well. You can also soak them in vinegar + water to draw out any impurities. Cut into slices or quarters.
* Add all of the ingredients to a high-power blender, starting with the wet ingredients. Be sure to add the wet ingredients first so that the blender doesn't get stuck. Blend for 15-20 seconds or until a thick pourable batter forms. Do NOT over-blend as this will break down the pith and result in a very bitter cake.
* Pour the batter into the lined pan and bake at 350F (180C) on the middle rack for 45 to 50 minutes or until a toothpick comes out clean 2 inches from the side.
* Remove the cake from the oven and let it cool for 10 minutes. Take the cake out of the loaf pan once it has cooled, and optionally top it with powdered sugar. Enjoy!

Ingredients ▫️ ⅓ cup raw unsalted almonds ▫️ 1 tablespoon unsweetened cacao or cocoa powder ▫️ 1 tablespoon chia seeds ▫️ 1 tablespoon hemp hearts ▫️ ½ cup nut or seed butter of choice, I used almond butter ▫️ ¼ cup honey, or agave

Instructions:
▫️ In a food processor, process the first four Ingredients for 20 seconds until fine crumbs.
▫️ Add the almond butter and honey and pulse until a nice and sticky dough forms.
▫️ Roll into 10 equal balls by using a tablespoon measuring spoon or a mini ice-cream scooper.
▫️ Once rolled, dip them in any toppings you enjoy or leave them plain. Store them in the fridge to firm up for at least an hour and enjoy.
