And let me tell you, it was love at first bite. I ate them every single day of our trip (and on 4 more trips we took in the coming years). In 2021, I was pregnant and majorly craving them. So I spent weeks making dozens of waffles trying to get it just right. I spent so much time developing this recipe I wore out my waffle maker and I had to order a new one in order to be able to keep working on this recipe. To say I was determined is an understatement. And after all that delicious work, I finally created a recipe that tastes as close as we can remember to the ones we had in Maui. This summer I thought it would be fun to create a Mochi Waffle Cake and of course, I had to use my favorite mochi waffle recipe and my go-to homemade whipped cream recipe!
