INGREDIENTS
3 cups cooked @ancientharvest Harmony Quinoa, cooled
1-2 cups cooked diced chicken
1/2 cup chopped dates
1/4 cup roasted salted pepitas
1/2 cup diced mini cucumbers
1/4 cup diced purple onions
Salt & cracked black pepper- to taste
Drizzle of evoo
Drizzle of honey (used my favorite local 🍯 from @beeladykim)
Juice of half a lemon
DIRECTIONS
1. Combine all ingredients into a large bowl and slowly mix until well combined.
2. Enjoyed chilled or room temperature.
