These Chicken Sausage Caprese Bites are the most perfect, EASY appetizer for Spring! With tomato, basil, and fresh mozzarella cheese, these are a hit every time!

Ingredients:
2 links Italian Style Chicken Sausage, sliced
2/3 cup cherry or grape tomatoes
1/2 cup fresh basil leaves, torn into small bites
1 ball fresh mozzarella, cut into small bites

On small skewers, place cheese, basil, tomato and chicken sausage. Serve right away, and top with balsamic glaze for an added pop of flavor! 💥

Did you know that the most decadent Chocolate Mousse only has 2 ingredients?! It’s literally the easiest thing to make and will blow your mind! See the recipe below!

2 bars (300g) dark chocolate, I used 70% Cocoa
4 cups heavy whipping cream

In a small saucepan, scald 1 cup of your heavy cream until it just starts to bubble around the edges. Pour over your chocolate bars that have been broken up in a mixing bowl. Stir together until the chocolate is melted and it’s well incorporated. This will make what called a ganache! In a separate bowl, whip the rest of your whipped cream until stiff peaks form. You can add 1/2 cup powdered sugar if you like, but I don’t think it’s necessary. Set aside about 1 cup of whipped cream to top your mousse, but gently fold the rest into your ganache. Put in serving bowls or glasses, and top with remaining whipped cream. I like to top with a raspberries or sliced strawberries! Enjoy!!

Y’all this recipe is one of those that is so dang simple, it will quickly become a staple for all of your get-togethers, movie snacks, or even to make ahead and have on hand for every day snacking! Think French onion dip…with a smoky twist 🌶️

Best Part….It’s only 3 Ingredients!!

1 carton sour cream
1 package @lipton onion soup mix
2 tablespoons chopped chipotle peppers in adobo sauce

Mix together and serve with chips or veggies! Goes GREAT with a bag of Ruffles!

Slightly obsessed with tree #5 in our house which lives on the patio. If you still have ornaments, you ain’t done!! 😂 I may still have enough for one more tree, though not sure I have the room 😂🤦🏼‍♀️ This tree was delivered to my house in under an hour using Walmart +, and was only $39.99!! It is 6’, pre-lit with white and multicolored lights. I will probably still add to it, but here’s to Christmas on the patio! 🍻

Y’all just haven’t had potato salad until you’ve tried my MIL’s Creamy Dill Potato Salad! This one is nothing like the standard yellow potato salad that yall know and love. Trust me, I know that one has its’ place in this world…but hear me out on this one! It’s creamy, tangy and full of delicious flavor! Recipe ⬇️

Ingredients:

1 lb bag yellow or red baby potatoes, quartered
1/2 cup mayo (only Dukes will do)
1/2 cup Zesty Italian premade salad dressing
1/3 cup chopped green onions
1 tablespoon Dijon mustard
Juice from 1 lemon
1/3 cup chopped fresh dill or 2 tablespoons dried dill
Salt and pepper to taste.

Wash and Quarter your potatoes, then boil in salted water until tender. In a separate bowl, combine all of your other ingredients and mix well. Drain your potatoes, then let them cool a bit. You want them still a bit warm; but not steaming hot. Coat them with your dressing mix and stir well. Refrigerate at least 2 hours, but overnight is best. Top with more green onions to serve! Enjoy!!! 😊

2-3lb chuck roast
1 can rotel tomatoes
1 can chopped green Chiles
2 tablespoons chopped Chipotle peppers in adobo sauce
1 packet ranch seasoning mix

Place everything in your slow cooker, and cook on low for 8 hours! Enjoy!

Comment RECIPE for the most delicious, simple, flavorful roast chicken sheet pan dinner! 🍽️ I love a sheet pan dinner. They’re so easy and you can pack so much flavor in these meals. This Roasted Dijon Chicken and Potatoes is in our regular rotation! The potato marinade makes a great salad dressing, too!

Ingredients:

4 bone in, skin on chicken thighs
1/2 pound halved baby gold potatoes
3-4 tablespoons olive oil
2 tablespoons minced garlic
1 tablespoon Dijon mustard
1 tablespoon lemon juice

Preheat your oven to 425. Cover a sheet pan with parchment paper for easy cleanup. Place your washed and dried chicken thighs on the pan, and coat liberally with olive oil. Season both sides with salt and pepper. In a bowl, mix your potatoes, remaining olive oil, salt, pepper, garlic, lemon and Dijon mustard. Mix well, then add your potatoes to the pan around the chicken. Bake for 25 minutes until the skin is crispy and chicken is cooked to 165 degrees internally. Juices should run clear. The chicken juices mixed with the Dijon marinade makes the most delicious sauce. Be sure to use it!!!!
