This Roasted Dijon Chicken and Potatoes is in our regular rotation! The potato marinade makes a great salad dressing, too! Ingredients: 4 bone in, skin on chicken thighs 1/2 pound halved baby gold potatoes 3-4 tablespoons olive oil 2 tablespoons minced garlic 1 tablespoon Dijon mustard 1 tablespoon lemon juice Preheat your oven to 425. Cover a sheet pan with parchment paper for easy cleanup. Place your washed and dried chicken thighs on the pan, and coat liberally with olive oil. Season both sides with salt and pepper. In a bowl, mix your potatoes, remaining olive oil, salt, pepper, garlic, lemon and Dijon mustard. Mix well, then add your potatoes to the pan around the chicken. Bake for 25 minutes until the skin is crispy and chicken is cooked to 165 degrees internally. Juices should run clear. The chicken juices mixed with the Dijon marinade makes the most delicious sauce.
