I saw so many people making Chicken Caesar Pasta Salad this summer, and I had to give it a try myself! Oh my goodness, it may be a new favorite that gets put in the regular rotation. Also, is there anything better than homemade Caesar dressing? This came together in about 45 minutes and didn’t last long after that! This is a noleftovers kind of meal! Here’s the recipe: Ingredients: 2 cups cooked pasta (penne or rigatoni work well) 2 cups cooked chicken thighs, diced (seasoned with lemon pepper and adobo seasoning) 2 cups romaine lettuce, chopped 1/2 cup grated Parmesan cheese 1/2 cup Caesar dressing (see recipe below) Croutons (optional) For the Homemade Caesar Dressing: 1/4 cup mayonnaise 2 tablespoons lemon juice 2 cloves garlic, minced 1 tablespoon Dijon mustard 1 tablespoon Worcestershire sauce 1/2 cup grated Parmesan cheese Salt and pepper to taste Instructions: Cook Pasta: Boil the pasta according to package instructions. Drain and let cool. Prepare Chicken: Cook chicken thighs (sauté in avocado oil) and dice into bite-sized pieces. Make Dressing: In a bowl, whisk together mayonnaise, sour cream, lemon juice, garlic, Dijon mustard, Worcestershire sauce, Parmesan cheese, salt, and pepper until smooth. Combine Ingredients: In a large bowl, mix together the cooked pasta, diced chicken, chopped lettuce. Add Dressing: Toss with the Caesar dressing until everything is well coated. Serve: Garnish with additional Parmesan cheese and croutons if desired.
