Carnitas!!! What you’ll need: Boston-butt (bone in or not is fine): slow cooked in your crockpot overnight with the fat slab on top. We season with cumin, basil, oregano and salt and pepper (just season it on top). It should be falling apart when done. Scrape the fat layer off the top and pull the rest into chunks on your cutting board. Sear in your pans with preferred oil about 30 seconds a side. Serve with all of your favorite fixings and build them in your taco stands! We like: Spanish rice, black beans, sour cream, cheddar and pepper jack shredded cheeses, mateos salsa (our favorite!), shredded lettuce and diced tomatoes. Enjoy!
