Carnitas!!!

What you’ll need:

Boston-butt (bone in or not is fine): slow cooked in your crockpot overnight with the fat slab on top. We season with cumin, basil, oregano and salt and pepper (just season it on top).
It should be falling apart when done. Scrape the fat layer off the top and pull the rest into chunks on your cutting board.
Sear in your pans with preferred oil about 30 seconds a side.
Serve with all of your favorite fixings and build them in your taco stands!
We like: Spanish rice, black beans, sour cream, cheddar and pepper jack shredded cheeses, mateos salsa (our favorite!), shredded lettuce and diced tomatoes.

Well let’s start with I did: I had thrown away all my teflon non-stick pans when I figured out that they were not the best healthy choice for our family.
.
But I was left without a replacement.
.
And a lot of sticky, messy pans.
.
And I cook a LOT. You could even say it’s one of my domestic love languages.

I saw the Hexclad pans advertised the first time and I was super confused. How could that work? I didn’t understand how it could be metal utensil safe AND non-stick. Or even just non-stick without the surface that flakes.

I had wondered whether it really, actually worked. And I was on the fence several times. But, it just felt like too big of a spend to take a chance on.

So when Hexclad said they’d send me some cookware so I could see for myself? I was super excited.

And what did I learn?

They’re LEGIT. They’re non-stick. For real.

What I didn’t know?

They’re fantastic with my induction top because they spread the heat out evenly on the pan. (If you’ve ever used cheaper cookware on induction you know how frustrating this is).

And now: I’m a FAN.

I’m a Meyer’s Briggs “Architect”. Which mostly just means that I’m a total pain in the bootie because my mind is never still.

It’s the most rare female personality type (which explains why I’m kind of a loner and have few female friends). I just do my thing, and along the way, God is nice enough to strategically put people in my path that insist I not live my life completely alone.

I think Rainman isn’t sure whether he should feel lucky or damned to be my forever guy, but I’m betting he’s felt both in the same day.

To be fair, he doesn’t often have time to sit down and contemplate life. That’s probably a good thing or he might realize that all of his friends have gone fishing while he’s modifying X to fit into the X place where it wasn’t made to go but we’re going to do a custom job to make it work.

I don’t see things as they are. I see what they could become. And it could be a curse… but I don’t see it that way.

It is what it is.

I’m so glad that there are so many of you here, cheering us on, so many of your husbands watching in horror as the Big Guy is relegated to yet another weekend of sweaty renovations and heavy lifting.

I don’t honestly know what I would do if I had to sit still.

As a child I played quietly… but I was ALWAYS designing. I was writing poetry. Music. I was drawing,… fashion. People. And by high school I had started constructing houses out of cardboard in our unfinished basement.

It’s been a long and winding road to get here from there. But it’s always been in there.
