Protein egg bites
12 eggs
1/2 cup milk
1/2 to 1 cup cottage cheese
1 cup diced bell pepper
Salt pepper
1 teaspoon paprika
400°F
20 minutes
Note: this recipe is SUPER forgiving. I use 1 cup of (blended so there aren’t chunks) cottage cheese to up the protein, but you don’t have to use that much.
I also had some chicken sausage that needed to be used up, so I chopped that and added it, too.
This is a GREAT base recipe. And you need the chopper. 😉
