EASY-TO-PREP WINTER GRAIN SALAD BALSAMIC DRESSING: - 2 tablespoons balsamic vinegar - 2 tablespoons extra virgin olive oil - 1 grated garlic clove - a sprinkle of salt SALAD - 200g cooked grain of choice (here I used quinoa) - 500g-ish orange veg (here I used two small butternut squashes - seasoned with oil, paprika, oregano, chilli flakes, salt and better) - 1-2 bunches of green leafy veg (here I used two packs of cavolo nero - massaged with oil and salt) - 1 thinly sliced onion TAHINI DRESSING: - 1/2 cup tahini - 1/3 cup ice cold water - 2 tablespoons extra virgin olive oil - 2 tablespoons apple cider vinegar - juice of 1/2 lemon - 1 grated garlic clove - 1 tablespoon of honey - salt OPTIONAL: - A protein of your choice (here I had a salmon fillet) - Feta 1. Preheat your oven to 200℃ and begin to cook your grain of choice, 2. Spread out your orange veg onto a baking sheet, and once seasoned, put in the oven for 20 minutes. 3. While that’s cooking, prepare your leafy greens on a separate baking tray, slice the onion, prep your balsmic dressing and make your tahini dressing. 4. After 20 minutes, take out your orange veg and add the onion to the same baking tray, mixing it all up. Then, put it back in the oven with the green leafy veg for another 10 minutes. 5. Once cooked, in a bowl, mix your grains, orange veg and leafy greens with your balsamic dressing and plate up with the tahini dressing drizzle on top, feta if you’d like and your protein of choice.
