Mommy & me muffins
Ingredients:
-wet
1 cup shredded zucchini
1 cup shredded carrots
1/2 cup shredded apple
1/2 cup mashed banana
2 eggs
1 tsp vanilla extract
1/4 cup maple syrup or honey
1/3 cup melted butter
-dry
1.5 cups all purpose flour
1 scoop vanilla protein powder
1/4 cup shredded coconut (unsweetened)
1 tsp baking soda
3 tsp cinnamon
1/2 cup dried cranberries
1/2 cup golden raisins
1/2 cup candied walnuts or pecans
Preheat oven to 350. Mix all of your wet ingredients in one bowl. In a separate bowl mix your dry ingredients. Combine your wet/dry ingredients and then fold in your cranberries and raisins. Lightly spray your silicone muffin pans with oil or butter and fill each one with the mixture. In a ziploc bag crush up your candied nuts and then spoon the crumbs on top, bake for 20-25 min or until a toothpick comes out clean.
** For the mini muffin pans- 20 min cook time, standard muffin pans takes about 25-27 minutes **
