Football season is officially here....that means chili, dips, salsas...and all that fall cooking is back in season too. Hard to believe we are nearing the middle of January! Did you plan on setting goals for the new year but are having a tough time getting started? This posterboard strategy is one that I have used many years when I have been struggling to get going. I use big oversized, posterboard, some sticky notes, and a sharpie. That’s all you need to break down your goals into small, tangible actions. Give it a shot – it is an inexpensive strategy to help get you going. 🤍

I am still totally in love with my organized charging station! Last year I used in acrylic, computer stand with drawers to create this set up. Now I have a spot where everything can sit and charge and also keep everything out of my bedroom. This is a great and easy project to work on in the new year!

I’ve been making “hulk” pancakes at least once a week for years! I promise, you won’t taste the spinach…

2-3 cups of spinach
1 cup egg whites
1/2-3/4 cup oats
Dash of vanilla or almond extract
1 tsp baking powder

Spray your hot pan, cook on both sides and top with your choice of toppings!
