MY FAVORITE THINGS SALAD // that's literally all i need to say. it's low calorie, full of flavor and easy to large batch (perfect for family gatherings + bridal/baby showers)
INGREDIENTS (measure everything with your heart, will list what i usesd):
arugula (used 2 small boxes)
prosciutto (used 2 packs)
cucumber (used 1 cucumber)
red onion (used 3/4 of a small red onion)
cherry tomatoes (used 1 container)
avocados (used 3)
crumbled feta (used 1 container)
hard boiled eggs (used 6)
juice of 2 lemons
balsamic
flakey salt
INSTRUCTIONS:
1) dice & slice all salad toppings and combine in a large bowl with arugula. add feta + lemon juice on top and toss. When plating, drizzle balsamic glaze + flakey salt on top of salad. serve and enjoy!
