PUMPKIN BARS::
2 Cups flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
1/2 tsp powdered ginger
1/2 tsp cloves
1/2 tsp nutmeg
4 eggs
1 Cup coconut oil (or vegetable oil)
2 Cups sugar
1 (15 oz) can pumpkin
Preheat oven to 350
In medium bowl, stir flour, baking soda, baking powder, salt, cinnamon, ginger, cloves & nutmeg. Set aside
In a large bowl beat eggs, oil, sugar & pumpkin. Gradually add dry ingredients
Pour into buttered jelly roll pan. Bake 15 minutes.
Let completely cool before frosting
FROSTING::
8 oz package cream cheese (soft)
1/2 Cup butter (soft)
1 tsp vanilla
1 Tbs milk
4 Cups powdered sugar
Beat cream cheese, butter, vanilla & milk. Add powdered sugar 1 cup at a time, beat after adding each cup. May add more milk if needed.
