French onion pasta
✨8 ounces pasta
✨3 Tablespoons EVOO
✨2 Tablespoons butter
✨4 minced garlic
✨1/2 teaspoon chili flakes (more or less for heat)
✨2 large sweet onions sliced
✨ 1 Tablespoon balsamic vinegar
✨2 teaspoon low sodium soy sauce
✨2 teaspoon Worcestershire
✨1 cup heavy cream
✨2 ounces Parmesan cheese(about 2/3 cup)
✨1/2-1 cup reserved salted pasta water(or you can use chicken stock but it will slightly alter flavor)
✨sourdough breadcrumbs (see recipe below)
✨1/4 cup shredded mozzarella (optional)
✨parsley for garnish
✨salt & pepper to taste
1. In a cast-iron skillet over medium heat, melt 2 Tablespoons of butter with 2 Tablespoons of extra-virgin olive oil.
2. Add the sliced onions and caramelize for 30 minutes, stirring every 10 minutes. If they brown too quickly, reduce the heat. If the skillet dries up, add a splash of water.
3. Meanwhile, bring a pot of salted water to a boil. Cook the pasta al dente. Reserve 1 cup of pasta water before draining.
4. Once the onions start to brown, add balsamic vinegar and continue caramelizing for 10 to 15 minutes.
5. In a separate pan over medium heat, heat 1 Tablespoon of extra-virgin olive oil. Sauté minced garlic and crushed red pepper flakes for about a minute until fragrant.
6. Add the caramelized onions, soy sauce, Worcestershire sauce, heavy cream, and 1/2 cup of reserved pasta water to the pan.
7. Mix and season with salt and pepper to taste. Allow the sauce to thicken slightly; if too thick, add more pasta water.
8. Add the cooked pasta to the sauce and mix well.
9. Top with mozzarella cheese, serve with breadcrumbs and fresh parsley. Enjoy!
Sourdough Breadcrumbs
✨3 slices of sourdough bread
✨2 Tablespoons of butter
1. Put your sourdough bread in a blender to create breadcrumbs.
2. On medium heat, add butter to a pan.
3. Add the breadcrumbs to the pan and let them toast for about 5 to 10 minutes, stirring continuously as they brown.
