Chopped Summer Corn Salad!🌽 WalmartPartner Using the OXO Softworks chopper to quickly and easily chop up all the veggies! Perfect for soups in the fall as well! Ingredients: 4 ears fresh corn (shucked) 1 cup grape tomatoes (halved) 1 cucumber (chopped) 1/2 cup red onion (chopped) 1 cup crumbled feta cheese Handfuls of fresh parsley and basil Dressing: 1/4 cup olive oil 1 1/2 tablespoon red wine vinegar 1 tablespoon lemon juice 1 1/2 teaspoon honey 1/2 teaspoon minced garlic Salt & Pepper Directions: 1. Boil corn for a few minutes. Drain and cut kernels. 2. Add corn, tomatoes, cucumber, onion, feta, and fresh herbs to a large bowl. 3. Mix together dressing ingredients and pour over salad. 4.
