This ad for Good & Gather has me drooling!! This simple fall sweet potato hash is going to be in the rotation for meal, prep all season long. I grabbed everything at target and it’s the perfect balance meal for any time of day! Recipe below and check out my LTK post to get everything you need to make it. Ingredients: 2 tbsp avocado oil (separated) 2 larger or 3 smaller sweet potatoes, chopped 2 bell peppers, chopped 1/2 onion, chopped 3 apple & Gouda chicken sausages, chopped 1 apple, chopped 1 tsp garlic powder 1/4 tsp nutmeg 3 large handfuls of kale Salt to taste Directions: In a pan over medium heat, add 1 tablespoon of avocado oil. Add chopped sweet potatoes, and bell peppers to the pan and stir. Cover the pan and cook stirring occasionally for 6 to 8 minutes. Add in onion and stir to combine, cooking for another two minutes Then make a well in the middle of the pan and adding the additional 1 tablespoon of avocado oil. Add your chicken sausages and Apple and let cook for two minutes in the middle of the pan, then stir everything together. Season with garlic powder, nutmeg and salt. Once the sweet potatoes are fork, tender, and everything is cooked, add kale to the top of the pan and cover, steaming the kale for one minute. Stir once more to combine and season with salt to taste as needed. Enjoy!
