HERBY AVOCADO EGG SALAD is the newest lunch option in my rotation and it needs to be in yours too! What makes this recipe stand out is all of the fresh herbs used-as well as a dash of my favorite spice (cumin) and it's all mashed up to make a salad that's so good, you might eat all of it in one setting. You can eat it straight from the bowl, as a bagel sandwich (I'm using an everything bagel and wowwww so good), over romaine lettuce leaves and so much more. And, you no longer have to peel hard boiled eggs one by one-use the hack shown here, which is to crack eggs into a loaf pan, place into another larger baking dish, fill 3/4 way with water and bake at 350F for 25-30 minutes.
