Today I am meal prepping for our family of six. I’m starting off with this easy recipe of refrigerator pickled red onion. This mandolin has been so great. It comes with multiple attachments.
For the recipe all you need is one red onion, 2 teaspoons of sugar, three-quarter cup of water and half a cup of vinegar. Heat up vinegar, water, & add sugar to dissolve. Add sliced onions to jar plus liquid mixture.
Use them on tacos, bowls, pork sliders, with eggs etc.
