🥘 This Winter Detox Soup is my go-to January reset to get rid of post-holiday bloating and weight gain. This soup is super easy to make and very comforting to eat. Here is what’s in it: 2 Ibs bone-in, skin-on chicken pieces like thighs or breasts 5 carrots 5 celery stalks 6 cloves of garlic 1 large nub of ginger 2 shallots 5 c. filtered water 1/2 c. Basmati rice, rinsed 3 T lime juice 1/2 c. peanuts (optional) Salt and pepper Chop vegetables and season chicken with salt and pepper. Saute vegetables in oil over med-high heat for about 3 minutes, stirring occasionally. Add chicken to the pot. Stir. Add water and stir. Bring to boil. Turn down heat and simmer for 20-30 minutes. Once chicken is cooked through, remove it and add the dry rice to the soup. Remove chicken from fat and bone once it is cool enough to touch. When rice is cooked, add the chicken back into the pot and add the peanuts, if desired. Stir in lime juice and taste for salt and pepper. Serve. 🍲🙋🏻‍♀️
