Line a baking sheet with parchment paper. Melt white chocolate wafers in a double boiler or microwave. Dip each cookie in the chocolate, covering all sides, then scoop out and tap off excess. Place on parchment, sprinkle with crushed candy cane, and repeat for all cookies. Chill in the fridge for 10 minutes.
Dip the bottom half of each cookie in remaining white chocolate and place back on the sheet to harden. Once set, melt green candy melts in the microwave and transfer to a piping bag with a size 2 tip. Pipe abstract tree shapes using a zig-zag motion on each cookie, adding sprinkles immediately. Allow to set completely before serving.
