Roast Chicken & White Wine sauce recipe 🍋🧅🧄
Ingredients:
Lemons
Onions
Garlic
Thyme
Small or medium sized chicken
Oil
Salt & pepper
Potatoes
Peppers
Tomatoes
Flour
White wine
Method:
Preheat oven to 180 degrees
Stuff chicken with roughly chopped lemon, onion, garlic & thyme. Use whatever is left over around the outside of the roasting tray. This will create your jus. Coat chicken in olive oil, salt and pepper. Pop in over for 75 mins (small chicken) 90 minutes (medium chicken).
Chop potatoes into diced sized chunks, coat in oil and season. The smaller diced the less time they will needed. These take anywhere between 45-60 mins depending on the size.
Scatter your tomatoes, chopped peppers and onion on a baking tray and coat in olive oil. These only take 30-35 minutes so they go in last.
Once your chicken is done, take out your Mediterranean veg and then blast up the oven to 220 degrees to crispy up the potatoes while you make your sauce. Tip the jus from the roasting tray into a frying pan, and thicken up with flour before adding some white wine.
Once potatoes are crispy, serve with chicken, veg and white wine sauce 🍽️
