Happy Hispanic Heritage month! 🇵🇷 I wanted to share one of my favorite Puerto Rican recipes with you, Arroz Con Gandules! Everyone’s family makes it a little different and I’ve always loved my brothers recipe so I wanted to share it with you! I love our le crueset for rice dishes, the lid seals very well! INGREDIENTS
Arroz Con Gandules (Puerto Rican Rice with Pigeon Peas)
2 large onions, chopped
6 garlic cloves, minced
1/3 cup sofrito (store bought or homemade)
1 tbs chives, chopped
2 lbs pork steaks, cubed and seasoned with Adobo
5 cups rice
4.5 cups water
2 16oz cans Pigeon Peas
3 Packets Sazon
2 Packets Pork Jamon
Adobo (to season meat)
4oz tomato sauce (I used Spanish style)
20 green olives
INSTRUCTIONS
Cook onions, garlic and chives 3-4 minutes
Add pork, season with 1 packet of sazon and cook covered over medium heat for 15 minutes
Add in sofrito, pigeon peas, olives, tomato sauce, 2 sazon packets & 2 jamon packets
Bring to a boil and cook for 10 minutes
Add in rice, stir and bring to boil
Stir again, cover with lid and cook simmer for 45 minutes
