SLOW COOKER PULLED PORK QUESADILLAS. The last time I prepped pulled pork I made three different meals out of it. These quesadillas were a huge hit with the family. 🔥
INGREDIENTS
Olive oil
Pulled pork (pork shoulder slow cooked in crockpot with olive oil, salt, cracked pepper, smoked paprika, brown sugar, bbq sauce, garlic, white onions on high for 5-6 hours or low for 8-10 hours)
White onions, halved and sliced
Tortillas
White cheddar, shredded
Mexican Four Cheese shredded blend
Toppings: creamy avocado cilantro lime sauce (Greek yogurt, avocado, cilantro, lime juice, cracked pepper), diced white onions, diced tomatoes, cilantro, jalapeños and lime wedges
TO MAKE: add olive oil to a large pan on medium-high heat. Add onions, sauté for 3-4 minutes. Add pre-cooked chopped pulled pork. Cook until lightly browned. About 5-6 minutes. Set aside.
Using the same pan, on medium heat, add butter and a flour tortilla. On one side of the tortilla sprinkle on white sharp cheddar cheese, followed by pork and then a layer of Mexican shredded cheese. Fold empty side over. Cook one minute then flip. Cook another minute.
Serve with creamy avocado cilantro lime sauce, diced white onions, diced tomatoes , cilantro, jalapeños and lime wedges
