Pad Thai means “Thai-style stir-fried noodles”. There’s so many ways to make it too, which is fun. Never gets boring. Here’s my recipe for a quick and easy CHICKEN + VEGGIE PAD THAI 🥢
2 tbsp butter
4 chicken breasts, cubed (use scissors to cut)
Salt, cracked pepper, onion powder - to taste
2 tbsp minced garlic
1/2 cup soy sauce
1/2 cup hoisin sauce
1 box of @anniechunsinc pad Thai rice noodles
3 eggs
1 cup matchstick carrots
1/2 purple onion, sliced
4 mini sweet peppers, sliced
2 cups napa cabbage, sliced
2 green onion stalks, sliced
2 tbsp crushed peanuts
Sesame seeds
Lime slices
Sriracha + red pepper flakes (optional)
1. Add cubed chicken to a buttered pan on medium heat.
2. Add salt, cracked pepper, onion powder, garlic and 2 tbsp of soy sauce.
3. Mix and cook for about 8-10 minutes.
4. Add 2 tbsp of hoisin sauce, sear until chicken is fully cooked. Mixing often. Once done, set chicken aside in a bowl.
5. Cook rice noodles according to package instructions.
6. Using the same pan, add three eggs. Scramble until done.
7. Toss in carrots, onions and peppers. Mix well.
8. Add rice noddles, remaining soy sauce, hoisin sauce, cooked chicken and cabbage, gently toss. Add more sauces if needed.
9. Top with green onions, peanuts, sesame seeds and serve with lime wedges.
