This HIGH-PROTEIN EGG FRIED RICE is one of my faves to mealprep. Quick, easy and keeps you full. INGREDIENTS Drizzle of olive oil 1 tbsp garlic, minced 1/2 small purple onion, diced 1 can chickpeas, drained Sea salt flakes + cracked black pepper - to taste 1.5-2 cups cold pre-cooked basmati rice 1 cup frozen peas 5-6 eggs, beaten Sliced jalapeños (optional) DIRECTIONS: 1. Add olive oil, garlic, purple onions, chickpeas, salt and cracked black pepper to a large skillet on medium heat. Sauté for about 5 minutes. 2. Add rice and peas, cook until rice is heated throughly, gently stirring and breaking up any large clumps. 3. Make a space in the middle of the pan and pour in the eggs. Let sit for a minute then slowly stir the egg puddle pulling in the rice. 4. Gently stir everything together while in the pan. 5. Add fried rice to a bowl and top with sliced jalapeños (optional) and more cracked black pepper. LTKfamily LTKhome LTKfit
