ROASTED CREAMY TOMATO SOUP
INGREDIENTS
Olive oil
5 vine tomatoes
2 large containers of cherry tomatoes
1 cup garlic cloves
1 large purple onion
3 tbsps white sugar
Salt, cracked black pepper
1 teaspoon fresh thyme
2 cups vegetable stock
1.5 cups heavy cream
4 fresh basil leafs
Red pepper flakes, to taste
DIRECTIONS
1. Preheat oven to 400F.
2. Add olive oil, tomatoes, garlic, onion, sugar and seasoning to a large baking sheet. Mix well.
3. Roast in oven for 25 minutes.
4. Stir and continue roasting for 15 minutes.
5. Add tomato mixture and fresh thyme to a blender and purée until smooth.
6. Transfer to a large pot on medium heat.
7. Slowly mix in vegetable stock and heavy cream.
8. Top soup with salt, pepper, freshly sliced basil.
9. Serve with a grilled cheese sandwich.
