Recipe is below and all of the tabletop items are from @walmart WalmartPartner Walmart WalmartHome comment SHOP for everything sent to your DM :) Delicata Squash Salad with Spicy Maple Vinaigrette For the salad: 2 delicata squash 2 sweet potatoes 2 Tbsp Avocado Oil Salt and pepper to taste Arugula 1/2 cup Pomegranate seeds 4 oz Goat cheese, crumbled 1/2 cup Pistachios, chopped Optional: Grilled Chicken Breast For the spicy maple vinaigrette: 1/4 cup balsamic vinegar 1 tbsp Dijon mustard 2 tbsp maple syrup 3/4 cup olive oil Salt and pepper to taste 1/8 tsp cayenne Preheat oven to 425 Cut squash in half and deseed, then slice into wedges Peel and cube the sweet potatoes Toss in avocado oil, salt and peeper, then roast on a parchment lined baking sheet for 35-40 minutes, turning at 25 minutes and continuing to roast until golden brown and caramelized. Meanwhile, whisk together dressing ingredients. When squash/potatoes are finished, assemble salad and drizzle the dressing between layers and on top.
