Whatever you decide to do as far as color always make sure you have enough of everything for all the courses you serve and drinks you have available. If you don't have enough room to put coffee out you can add a coffee station like I did here for after-dinner coffee & desserts. This allows your guests to help themselves when they are ready for their last course.
