These animal cracker cookies are so easy, and fun to make! I used GF flour (@bobsredmill) and adjusted the recipe a couple times to get a softer texture. I don’t typically bake with white sugar, especially if it’s for the kids. I like using natural sweeteners like date sugar, honey, or pure maple syrup, but hey if that’s not your thing, go ahead and replace what I have below with what sweetener you want! If you’re using all-purpose flour, it might come out dense or diffferent… when in doubt, add more butter 🧈 (hehe semi joking! I don’t bake with all purpose flour so I have no idea🫣😆)
9 tablespoons butter (at room temperature)
¼ cup date sugar
2 tablespoons honey
1 large egg
1 teaspoon vanilla extract
1.5 cups of GF flour (@bobsredmill)
1 teaspoon baking powder
1 teaspoon ground cinnamon
Bake at 350 for 10-15 mins depending on thickness.
