PART 5 of my Summer Snack Series will not disappoint. It’s a sweet version of a classic bruschetta. I mainly use stone fruit, but you could definitely add in more savory elements like minced garlic or shallots. 🍒🍑Stone Fruit Bruschetta Recipe🍑🍒 INGREDIENTS 1 Baguette, sliced 2 yellow peaches, diced 18 cherries, pitted and quartered 8 oz burrata 4 tbsp olive oil 3 tbsp mint, ribboned Balsamic glaze Salt INSTRUCTIONS 1. Preheat oven to 425 degrees F. Brush baguette slices with 2 tbsp of olive oil, sprinkle salt, and lay out on a baking sheet. Place in oven and toast for 8-10 minutes until slightly golden around the edges. 2. Dice the peaches, pit and quarter the cherries, and combine in a bowl. Drizzle remaining olive oil, sprinkle with salt, top with ribbons of mint leaves, and toss! 3. Top toasted bread with burrata, stone fruit mixture, drizzle balsamic glaze, and add salt to taste.
