•MM ONE PAN PASTA RECIPE• INGREDIENTS: - 14 oz heirloom cherry tomatoes cut in 1/2 - 4 garlic cloves minced - 1 lemon zested (save slice for spritzing pasta) - Roughly chopped basil - 4 cups chicken broth - 1 tsp salt - 1 tsp red pepper flakes - Salt & pepper to taste - 1/2 cup parmesan cheese (more to taste) INSTRUCTIONS: 1) Prep ingredients- Cut cherry tomatoes in half, zest lemon, mince 4 garlics cloves, roughly chop basil, and cut lemon in half to use later. 2) Boil 4 cups of chicken broth (could use water but broth is more flavorful). 3) Pour 1/4 cup of olive oil in large pan, add garlic and 1tsp of salt. Place dry pasta and lemon zest in pan. Pour boiling chicken broth on top. 4) Cook covered over medium heat for 7 min. 5) Add two handfuls of spinach, spritz of lemon, and 1/4 cup of Parmesan cheese (more to taste if needed).
