6 Red Cherry Tomatoes Sprigs
2 cups yellow cherry tomatoes
6 tagliatelle nests
8 oz fresh Burrata
2 cloves garlic
fresh oregano
olive oil
salt and pepper
1. Bring a pot of salted water to a boil.
2. Place the tomatoes on a cookie sheet, season with salt, pepper, and olive oil, and place them in the oven (400 degrees) for 20 minutes.
3. Heat 2 tablespoons of olive oil in a pan, and add 2 garlic cloves.
4. Once the tomatoes are ready, place half of them in the pan with the garlic and cook them for 5 minutes. Keep the other half warm with foil.
5. Cook the tagliatelle “al dente.”
6. Once ready, place them in the pan and gently mix for 1 minute.
7. Assemble the plate. Place the tagliatelle, and add the burrata and the fresh oregano on top. Garnish the plate with one sprig of tomatoes. Serve immediately.
