Come to Target with me so we can find everything we need to make these highly requested, chocolate chip pumpkin muffins! All the ingredients I used are Good & Gather by Target. So you know they’re not only going to be good, they’re going to be affordable as well. All you need is flour, pumpkin spice, baking soda, baking powder, salt, butter, sugar, eggs, a can of pure pumpkin, vanilla extract, milk and chocolate chips. Recipe: PUMPKIN CHOCOLATE CHIP MUFFINS Combine the following: 1 ¾ c unbleached all purpose flour 1 ½ tsp pumpkin pie spice 1 tsp baking soda 1 tsp baking powder ¾ tsp salt Set aside the dry ingredients then mix together the following in a stand mixer: ½ cup (1 stick) unsalted butter (room temperature for easier mixing) 1 ¼ cups sugar (mix in after the butter is smooth) 3 large eggs (mix in one at a time) 1 c canned pure pumpkin 1 tsp vanilla extract ⅓ c whole milk (any milk will work) *Begin slowly mixing in your dry ingredients into the stand mixer 1c chocolate chips. Mix this into the stand mixer when all the above ingredients are mixed well Grease your muffin pan or line with muffin liners Preheat oven to 350º and bake for 18 minutes for muffins.This recipe can also be done in a loaf pan and baked fro 55 minutes. Be careful removing the muffins from the oven because if your family is anything like mine, they’ll be trying to sneak one before you can even get them out. And for an extra added treat, I topped the muffins off with Good & Gather’s Limited Edition, yummy Apple Cider. It’s as simple as that!
