Italian Meatball Soup
30 Amylu chicken meatballs
mirepoix(chopped onion, carrots & celery) mix from trader Jo’s
1/2-2/3 tube of tomato paste
2 Tbl Italian Seasoning
Olive oil
8 cups chicken broth
2” square parmigian cheese rind for flavoring
1 zucchini chopped
1 summer squash chopped
Salt pepper to taste
1/2 C fresh grated Parmesan cheese
Bake meatballs in 375 degree oven for about 20 minutes until browned. Saute mirepoix mix in olive oil about 10 min. Add tomato paste and Italian seasoning. Cook another min or two. Add chicken stock and Parmesan rind. Stir and simmer about 20 min. Add squash. Cook another 10 min. Add meatballs. Serve. Garnish with fresh Parmesan cheese.
