If my kids ran the school, the cafeteria would be serving sushi for lunch! In reality, there isn’t budget for that! 🤣🤪 Today’s edition of we can make that at home - SUSHI! 🍱 In an effort to mix it up, I am packing cooked sushi rolls in my kids bento lunchboxes. To do it affordably and safely, I’m building the sushi rolls with cooked flaked salmon and cooked spam. sushi rice mixture: 4 Tbsp rice wine vinegar, 3 Tbsp sugar, 1 tsp salt 4 Cups cooked sushi rice (jasmine rice is fine too) 6 nori/seaweed sheets 2 mini cucumbers cut into sticks 1/2 can Spam lite cut into sticks 1 salmon fillet (~4-5oz) cooked, flaked Optional but flavorful sauces we have on hand: Kewpie Japanese mayonnaise Bachan Japanese barbecue sauce This made about 6 rolls- enough to fill lunch boxes for tomorrow, after feeding our family of 4 tonight at the kitchen counter. TIPS— -Use less rice than you think, spread it out. -Cut everything into sticks roughly the thinness of a French fry- for easier rolling. -Use a rolling mat and gentle pressure to get the rolls as tight as possible -Slice your homemade sushi rolls with a clean sharp knife -pack sushi into a chilled bento lunchbox -buy rice in bulk to save money and store it in the large grain/rice storage container LTKVideo LTKKids LTKFamily
