👻 🍪Dairy-Free Ghost Chocolate Chip Cookies Ingredients: 1 cup plus 2 tablespoons all purpose flour (I use white flour) 6 tablespoons brown sugar 6 tablespoons granulated sugar ½ cup shortening ½ teaspoon vanilla extract 1/4 teaspoon water 1 egg 1/2 teaspoon baking soda 1/2 teaspoon salt 1 cup dairy-free chocolate chips Topping: · Marshmallows cut in half (dairy free from Trader Joes) · Dairy free chocolate of choice melted · Toothpick Helpful Tools: · Mixing bowls · Hand mixer · Cooling rack · Silicone nonstick sheets · Baking sheets Instructions: Preheat Oven: Preheat your oven to 375°F and line a baking sheet with parchment paper or nonstick silicone sheet. Cream Ingredients: In a large bowl, use a mixer to cream together the shortening, sugars, vanilla, and water until creamy. Beat in the egg. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Mix Together: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix. Add Chocolate Chips: Fold in the dairy-free chocolate chips. Shape Cookies: Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake: Bake for 10-12 minutes, or until the edges are golden brown but the centers are still soft. I start my cookies at 8 minutes because our oven cooks quickly. Cool: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Melt the chocolate in pan or microwave Then add the half of marshmallow to the top of cookie (make sure cookies aren’t hot or else the marshmallow will expand) Use toothpick to draw the ghost face however you’d like.
