The other day, my husband and I were discussing family traditions, and he mentioned a fun one from his childhood—his family would make taco soup every Halloween. I love traditions like this, and I thought it would be a perfect one to continue with our family, especially since I’m such a big fan of soup. Since we’re trying to incorporate more protein into our diet, I made that the focus of this taco soup recipe. I started by chopping an onion and a green pepper, then sautĂ©ed them in a little olive oil. Once they softened, I added a tablespoon of garlic and mixed in some lean ground beef. The leaner beef gives us more protein with less fat. Next, I stirred in taco seasoning and a packet of ranch seasoning for extra flavor. Then, I added one can each of black beans, pinto beans, corn, and Rotel with green chilies. To bring it all together, I poured in enough beef broth to cover the ingredients. After giving everything a good stir, I covered the pot and let it simmer for 15 minutes. Once done, it’s ready to serve! I topped mine with avocado, shredded cheddar cheese, and tortilla chips, but feel free to add your favorite toppings. This is probably the easiest soup I’ve ever made, and it turned out incredibly delicious. Let me know in the comments one of your favorite family traditions!
