Switching gears today! While I usually share all things midlife fashion, I thought it’d be fun to give you a peek into the kitchen for something a little different. I’ve been making my famous chicken pot pie for years, and it’s one of those comforting, go-to recipes that never fails to bring smiles (and clean plates) to the table.
What makes this recipe so great? It’s simple, delicious, and perfect for busy weeknights or cozy weekends at home. Here’s what you’ll need to make it:
* 1 premade pie crust (two sheets: one for the bottom and one for the top)
* 1 can of cream of chicken soup
* 1 can of cream of potato soup
* 1 can of sliced carrots (drained)
* 1 can of young sweet peas (drained)
* Half of a rotisserie chicken, shredded
How to make it:
1. Place one sheet of pie crust on the bottom of your pie dish.
2. Mix the soups, drained veggies, and shredded chicken on top of the pie crust.
3. Cover it all with the second sheet of pie crust, pressing the edges together to seal.
4. Bake at 450°F for about 45 minutes, but start checking around the 40-minute mark to make sure it’s perfectly golden and cooked through.
That’s it! Super simple, super delicious, and guaranteed to fill your home with the coziest smells.
