Greek Chicken Bowls (GF & DF)

Chicken Marinade
* 2 tbsp EVOO
* 2 tbsp red wine vinegar
• 2 tbsp lemon juice, or juice from one large lemon
* 3 garlic cloves, minced
* 1 tbsp oregano
* 1 tsp coriander
* 1/2 tsp paprika
* 1 tsp cumin
* 1/2 teaspoon sea salt
• 1/4 teaspoon black pepper
Dairy Free Tzatziki
(Adapted from @lovingitvegan 🥒)
* 1 cup raw cashews, soaked for at least an hour
* 1 cucumber, diced and peeled
* 1 tbsp lemon juice
* 1 tbsp EVOO
* 4 garlic cloves, minced
* 2 tbsp fresh dill
* 1 tsp dried mint
* 1 tsp sea salt
* 1/4 tsp black pepper
Other ingredients
* 1-1.5 pounds of chicken breast
* Brown rice, cooked (however much you want)
* Romaine, chopped (however much you want)
Directions
- assemble all marinade ingredients and let chicken marinade for 1-3 hours
- Cook brown rice according to package instructions and wash/chop romaine, set aside
- Add a tbsp of EVOO to a pan and cook your chicken for 7 minutes on each side, or until cooked through
- While chicken is cooking, add all tzatziki ingredients to a blender and blend until smooth, set aside
- When chicken is done, remove from pan and add the red onions to the pan that the chicken was cooked in, adding any leftover marinade to cook the onions down in
- Cube your chicken and add it back to the pan to mix with the now cooked down red onions
- Assemble your bowl by adding brown rice, chopped romaine, the chicken & onion mixture, and topping with the tzatziki
