COVER GIRL COOKIES- gluten and sugar free, 45 calories each
1 cup baked sweet potato
1 egg
1/2 cup + 2 tablespoons unsweetened cocoa powder
1/2 cup granulated monkfruit
1 teaspoon vanilla extract
1 tablespoon instant espresso
Preheat oven to 350 degrees.
Combine all ingredients in a large bowl and blend with a hand mixer until completely combined and smooth.
Use a spoon to transfer dough to parchment lined baking sheet to make 8 cookies. Dough is sticky- use the spoon to shape into rounds.
Bake for 13-15 minutes. Let cool and use spatula to remove from parchment. They will be very soft at first.
Store in the fridge- this will keep them fresh and also helps them firm up a bit.
