CHEESEBURGER EGG BAKE- 31 grams protein, 260 calories
1/2 yellow or white onion, diced
1 pound extra lean ground beef
8 eggs
1 cup 2% cottage cheese
1 diced Roma tomato
1/2 cup shredded mild cheddar
salt and pepper
Preheat oven to 350. Line an 8x8 inch baking pan with parchment.
Lightly spray a large pan with avocado oil and sauté onion until it starts to soften. Add ground beef, season with salt and pepper and cook until fully done.
Meanwhile combine eggs and cottage cheese and blend until completely smooth.
When beef is cooked spread evenly over the bottom of baking dish and pour egg mixture over it. Top with diced tomato and shredded cheddar and additional salt and pepper.
Bake at 350 for 35 minutes or until lightly browned and set in the center. Cut into 6 pieces. Tastes great hot or cold!
