Ramadan Mubarak! ✨ I love exploring new and flavourful dishes during Ramadan. Today, I made Date Flapjacks and Sumac Chicken with Crispy Chickpea Fattoush - both perfect for iftar! Sumac Chicken & Fattoush • Marinate 6 chicken thighs (or 4 breasts) with olive oil, lemon juice, sumac, allspice, cumin, mint, garlic powder, pomegranate molasses, salt & pepper. • Bake at 220°C (425°F) for 45 minutes, broiling for crispy skin if needed. • Serve with sliced red onion, peppers, fresh coriander & pomegranate seeds. Fattoush Salad with Crispy Chickpeas • Finely chop cucumbers, romaine lettuce, cherry tomatoes, mint leaves, peppers & spring onions. • Whisk together olive oil, garlic paste, lemon juice, sumac, pomegranate molasses, dried mint, lemon pepper, salt & allspice for the dressing. • For crispy chickpeas: Toss drained chickpeas with olive oil, salt, garlic powder, onion powder, paprika, cayenne & cumin. Air-fry at 200°C (390°F) for 12-15 minutes, shaking occasionally. • Top salad with crispy chickpeas and air-fried pitta or tortilla pieces. Date Flapjacks • Chop 400g Medjool dates and mash with a little water into a paste. • Melt 360g unsalted butter, stir in 120g light brown sugar, 6 tbsp golden syrup, 3 tbsp Manuka honey, date syrup & 1 tsp cinnamon. • Add 660g oats and mix well. • Layer: Press half the oat mixture into a baking dish, spread the date paste on top, then add the remaining oat mixture, pressing it down firmly. Sprinkle with mixed seeds. • Bake at 170°C fan (375°F) for 25-35 minutes. Leave to cool, then chill in the fridge before slicing.
