If my kids ran the school, the cafeteria would be serving sushi for lunch! In reality, there isn’t budget for that! 🤣🤪
Today’s edition of we can make that at home - SUSHI! 🍱

In an effort to mix it up, I am packing cooked sushi rolls in my kids bento lunchboxes. To do it affordably and safely, I’m building the sushi rolls with cooked flaked salmon and cooked spam.

sushi rice mixture: 4 Tbsp rice wine vinegar, 3 Tbsp sugar, 1 tsp salt
4 Cups cooked sushi rice
(jasmine rice is fine too)
6 nori/seaweed sheets
2 mini cucumbers cut into sticks
1/2 can Spam lite cut into sticks
1 salmon fillet (~4-5oz) cooked, flaked
Optional but flavorful sauces we have on hand:
Kewpie Japanese mayonnaise
Bachan Japanese barbecue sauce

This made about 6 rolls- enough to fill lunch boxes for tomorrow, after feeding our family of 4 tonight at the kitchen counter.

TIPS—
-Use less rice than you think, spread it out.
-Cut everything into sticks roughly the thinness of a French fry- for easier rolling.
-Use a rolling mat and gentle pressure to get the rolls as tight as possible
-Slice your homemade sushi rolls with a clean sharp knife
-pack sushi into a chilled bento lunchbox
-buy rice in bulk to save money and store it in the large grain/rice storage container

Stop throwing your berries away! These produce storage containers are the real MVP among the many kitchen goods I’ve tried. They keep our fruits, veggies, and salad lasting so much longer! I literally never have to throw berries away anymore. I have recommended these so many times, but have never really explained exactly how they work so well.

The best part is the fact that you can wash the grapes/etc first and the container is designed to keep your produce stored in the ideal environment. The storage container actually IS a strainer/colander itself (so you could also store straight from the store, then wash as needed, like I do for broccoli). There’s a snap-on tray at the bottom to add water, to help produce items that need it to maintain adequate humidity, and air vents on each end of the box allowing you the option to close off or encourage airflow, again catering to the needs of your produce items.

I love that there is no guess work involved in using these containers. Each container has examples of items you would put inside (leafy greens, peppers, grapes, etc.), as well as exactly how to store them, are printed directly on the lid.

These are clear for keeping everything visible, so the kids are encouraged to help themselves to fresh healthy snacks! Having everything accessible and ready to eat is a game changer, and reduces food waste. These containers are my favorites hands down and will always have a spot on my LTK if you need them.🫐🍓🍇🍒

Back to school season is in full swing! This is how I pack hot lunches for my kids to take to school. It is a great way for me to stretch the buck by turning leftovers into meals my kids get excited for because it feels like a warm hug.

These stainless steel meal containers are full sized, fit to hold a meal large for an adult or 4th grader! I’m much prefer these to the small round soup thermoses because the openings to those containers are so narrow and they don’t hold enough food to keep a first grader full. These large warm lunch containers come with a removable divider in case you want to have two separate components inside your hot lunchbox.

• heat water to boiling, use a hot water kettle to save time
• warm your hot lunch containers with the hot water
• heat food to piping hot (it will cool to a safe warm temperature)
• carefully empty the water and place hot food in your heated container

Caution ⚠️ Be careful when handling hot water. Don’t do this with any containers that are not safe for high temp / boiling 212 degrees. These stainless steel containers are what I trust with hot water and my children’s hot food. ♥️

Shoutout to our favorite produce storage containers! Our strawberries and blueberries stay fresher longer in the refrigerator when stored in these produce containers. Strawberries, blueberries, cherries, grapes, even fresh cut fruits last so much longer in these clear produce organizers. They’re also MVP for keeping our lettuce and vegetables crisp!

Everything stays fresh and stored at in its optimal conditions - with air flow vents that can be closed airtight or left open for air flow depending on the needs of the food you’re storing. Additionally, things that need extra humidity get it via a water tray or otherwise produce stays high and dry in water draining / colander style straining containers.

Choose to wash your produce first and then store (this is what I do with all the fruits so they’re ready for the kids to snack on.
OR
Wash your produce when you’re ready to use the item. I store veggies unwashed, then wash them in the container (that strains off water) wash and use as needed.

You can even store cut produce in these boxes too! The excess juice runs off into the drip tray to keep fruit from getting waterlogged.

The clear containers keep the fresh produce accessible and visible in the refrigerator so my kids eat it all before it goes to waste. This is must have for kitchen organization

It’s hot AF and cherries 🍒 are in season (and on sale) so I got a bunch and made use of our cherry pitter that can handle pitting up to 6 cherries at once. This helps make fast work of packing bento lunchboxes for my kids this back to school season.

Okay this is an old post recycled from last winter but so many mom friends have been asking how I send hot lunches to school. These stainless steel hot meal containers help me send them with a home-cooked meal- my way of sending a warm snuggly hug.

I use hot water (212 degrees /boiling) to warm these stainless steel meal containers and then heat the food to piping hot. Add hot food to the hot container and then the kids will have a meal that is the perfect temperature for lunchtime at school.

BONUS- This is a great way to stretch the budget because you can easily turn their favorite dinner leftovers into lunch or double batch dinner Spaghetti and meatballs and chow mein/rice stir fry are favorites in our family!

Both of my kids like their lunch with a drizzle of this Japanese barbecue sauce, and one even adds hot sauce! Yum!

My kids are back in school, and with the same bento lunchboxes for the third year! 💪🏽These bento boxes come with a 2 year warranty and are going to last well beyond that. The @bentgo chill box is well worth it because they come with a built in ice pack to keep food chilled until lunch time.

Last year, I got a set of spare covered lunch trays to save myself time. Meal prep is easier when you can pack an extra set of lunches at the same time, to be saved for the next day!

We keep the produce harvested from our gardyn (indoor hydroponic garden growing system) stored fresh in produce containers that are designed to keep fruits and veggies fresh longer! The Small Berry sized produce keeper shown here is big enough for today’s Cherry tomato harvest. Any more than that and I’d have to size up to the Medium Veggie sized pro keeper.

We have a few of these to help us keep things like grape tomatoes, berries, blueberries, strawberries, etc fresh. You can even store cut fruit in there!

Each clear produce storage container has air flow vents that can be opened or closed a snap-on water tray on the bottom to help maintain ideal conditions your fruits or vegetables. The lid gives examples of items and you whether you’d open or close the vent and whether to add water to the tray, take the guess work out! For tomatoes i like to open the vents and leave the drip tray off all together and store on the counter

Wash first or wash when you’re ready to use, you decide. The containers have colander bottoms to help you strain off any excess water and the drip tray keeps your fridge dry.

This is one of the home and kitchen finds I’ve been most happy with! Clear produce storage containers keep everything visible so it’s easy for the family to find our fresh lettuce product and fruits. These stackable containers keep our veggies crisp and berries fresh. I’m no longer throwing away moldy berries! These are pricer but have paid for themselves in food we didn’t have to throw away.
